Strawberry Mint Lemonade

Refreshing and easy to make, strawberry mint lemonade is the perfect drink for a warm afternoon. Also, it's so pretty and can enhance table decor for a lovely brunch.
2 cups granulated sugar
2 1/2 cups freshly squeezed lemon juice approx. 16-20 medium lemons

6-8 fresh mint leaves
In a medium sauce pan, combine 2 cups of water and 2 cups of sugar. Use medium-high heat to dissolve the sugar. Let the simple syrup cool.
Rinse all the strawberries, cut off the stems and mush them in the pitcher. Or blend them on the chop setting in a blender. Then mush the strawberries in the pitcher.
Add the lemon juice and 5 cups of water. Add the simple syrup little by little while stirring. Be sure to taste as you add the syrup. (use a little cup). I used all the simple syrup.
Add the fresh mint leaves and stir again. Let the lemonade sit in the refrigerate for about an hour so all the flavors can blend.
Serve over some ice. Garnish with more mint.
